While he's one of the most consistent tight ends in the NFL now, Knox was an unranked quarterback coming out of Brentwood Academy in 2015. He transitioned to tight end at Ole Miss but didn't really find major success until making it to Buffalo. The Bills took him in the third round of the 2019 NFL Draft and he's accounted for 2,694 yards and 27 touchdowns in seven seasons.
